Mm Mm - Mocha Mud Pie: Publix Saves The Day

While doing a bit of sorting, shuffling & updating of my personal recipe collection recently, my granddaughter was all about it. I let her choose from several ice cream desserts for this weekend since it is to be in the mid 90's. She selected Mocha Mud Pie, a favorite which a cookfriend shared with me years ago. Walmart does not have the coffee ice cream, but Publix does! Publix also had Nellie & Joe's Key Lime Juice (key lime pie essential), Boars Head Horseradish Mustard (better that Poupon), and cabbage. Walmart was out of cabbage - really? How can you be out of cabbage 4 days before summer kicks off? Anyway, this a good one for all of you dessert lovers. I will be doubling all ingredients for my crowd. Happy Memorial Day! 

Mocha Mud Pie I

Crust:
 1 cup Oreo cookies, crushed                                                           
3 Tbsp. butter, melted
1 egg white, lightly beaten

Stir together crushed cookies & butter; press into 9” pie plate. Brush with egg white. Bake 5 minutes. Cool.

Filling: 1 ¼ cups pecans, chopped                                               
           ¼ cup sugar                                    1 pint chocolate ice cream, softened
         1 pint coffee ice cream, softened            10 crushed Oreos


1. Place pecans on cookie sheet, sprinkle with sugar, then bake 350 for 6-8 min. Cool.
2. Stir together ice creams, 1 cup cookie chunks, & 1 cup pecans; spoon into crust. Freeze 10 min. Press remaining crumbs & pecans on top. Cover & freeze 8 hrs.

Better Late Than Never: Raspberry Margaritas

I had promised to post my newest concoction in the cocktail world many weeks ago, but life can be so busy! New grandchild (happy), my baby's college graduation (happy), my own anniversary (happy), and a bridal event to host (happy)- thus, the newest cocktail development. My colors for the party are pale pink and chocolate, so when I inquired to the bride for her preference on a cocktail - vodka or tequila type - she likes tequila. The PPP would have been the right color but wrong inebrient. PPP (Pink Panty Pulldown) is in January blog collection, if you are looking for it. Introducing to you, faithful readers, a very nice twist to a traditional margarita. And, for your information, they can be prepared well in advance. I have done 4 gallons last week for next week's soiree. Get going on yours and enjoy for the upcoming Memorial Day weekend.



Raspberry Margaritas

12 oz. can raspberry lemonade concentrate (Kroger has)          2 Tbsp. Raspberry Chambord
juice of 2 limes                                                                     1/4 can Triple Sec
1/2 can tequila                                                                      lots of ice

Use lemonade can for measuring when noted. Put all in blender, then fill blender with ice. Blend to slush. Garnish with lime wedge. Beautiful shade of pink.
